Description

Ingredients

  • 6 oz cream cheese, softened
  • 2 tbsp monk fruit sweetener
  • 1 tsp pure vanilla extract
  • 1 medium apple, peeled and finely diced
  • 1 tbsp butter
  • 1 tsp ground cinnamon
  • 1 tbsp monk fruit sweetener
  • 6 low-carb tortillas or keto-friendly wraps
  • 2 tbsp melted butter for brushing
  • 1 tsp cinnamon for topping

Instructions

  1. In a medium bowl, combine the softened cream cheese, monk fruit sweetener, and vanilla extract until smooth and creamy.
  2. Heat a skillet over medium heat and melt the butter.
  3. Add the diced apples, cinnamon, and monk fruit sweetener to the skillet.
  4. Cook for 5 to 7 minutes until the apples become tender and lightly caramelized. Remove from heat and let cool slightly.
  5. Lay the tortillas flat on a clean surface.
  6. Spread a layer of cheesecake filling over each tortilla, leaving a small border around the edges.
  7. Spoon the cinnamon apple mixture evenly over the cream cheese layer.
  8. Roll each tortilla tightly into a log shape and place seam-side down.
  9. Brush the outside of each roll-up with melted butter and sprinkle lightly with cinnamon.
