Description

This sugar-free low carb vanilla bean ice cream is creamy, rich, and packed with real vanilla flavor. Made with a smooth custard base, it delivers a luxurious texture without refined sugar, making it a perfect keto-friendly frozen dessert.


Ingredients

  • 2 cups heavy cream
  • 1 cup unsweetened almond milk
  • 4 large egg yolks
  • 3/4 cup powdered erythritol or monk fruit sweetener
  • 1 tablespoon vanilla bean paste
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon salt
  • 1/4 teaspoon xanthan gum

Instructions

  1. In a medium saucepan, combine the heavy cream and almond milk over medium heat until warm but not boiling.
  2. In a separate bowl, whisk together the egg yolks and powdered sweetener until smooth and pale.
  3. Slowly pour a small amount of the warm cream mixture into the egg yolks while whisking continuously to temper the eggs.
  4. Gradually return the tempered egg mixture to the saucepan with the remaining cream mixture.
  5. Cook over low heat, stirring constantly, until the custard thickens slightly and coats the back of a spoon.
  6. Remove from heat and stir in the vanilla bean paste, vanilla extract, salt, and xanthan gum until smooth.
  7. Allow the custard to cool completely, then cover and refrigerate for at least 4 hours or overnight.
  8. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until thick and creamy.
  9. Transfer to a freezer-safe container and freeze for 2–3 hours before serving for a firmer texture.
