Ingredients

  • 1 tablespoon olive oil
  • 1 1/2 pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • Salt and black pepper to taste
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 medium onion, diced
  • 3 tablespoons red curry paste
  • 1 tablespoon fresh ginger, grated
  • 6 cups low-sodium chicken broth
  • 1 can (13.5 oz) coconut milk
  • 4 ounces rice noodles
  • 1 tablespoon fish sauce
  • 2 teaspoons brown sugar
  • 3 green onions, sliced
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons fresh lime juice

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken with salt and pepper, then cook until lightly browned. Remove and set aside.
  3. In the same pot, sauté garlic, onion, and bell pepper until softened.
  4. Add red curry paste and ginger, cooking for 1 minute until fragrant.
  5. Pour in chicken broth and coconut milk, stirring to combine.
  6. Return chicken to the pot and bring to a gentle boil.
  7. Reduce heat and simmer for 10 minutes until chicken is cooked through.
  8. Add rice noodles, fish sauce, and brown sugar, cooking until noodles are tender.
  9. Remove from heat and stir in green onions, cilantro, basil, and lime juice.
  10. Taste and adjust seasoning, then serve hot.
