Description

A soft and moist two-layer tiramisu milk cake combining fluffy sponge, coffee-infused milk soak, and a rich mascarpone cream topping for a light yet indulgent dessert.


Ingredients

  • For the Sponge Cake:
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • For the Milk Soak:
  • 1/2 cup condensed milk
  • 1/2 cup evaporated milk or regular milk
  • 1 tablespoon instant coffee dissolved in 2 tablespoons warm water
  • For the Cream Layer:
  • 1 cup heavy cream, chilled
  • 1/2 cup mascarpone cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • For Topping:
  • 1 tablespoon cocoa powder

Instructions

  1. Preheat oven to 180°C (350°F). Grease and line two round cake pans or one pan to slice later.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs and sugar until pale and slightly thick.
  4. Add milk, oil, and vanilla extract; mix until smooth.
  5. Gradually fold dry ingredients into wet mixture without overmixing.
  6. Pour batter into pans and bake for 20–25 minutes until a toothpick comes out clean. Cool completely.
  7. Prepare the milk soak by mixing condensed milk, milk, and dissolved coffee.
  8. Whip heavy cream until soft peaks form.
  9. In another bowl, mix mascarpone, powdered sugar, and vanilla until smooth.
  10. Fold whipped cream into mascarpone mixture until light and fluffy.
  11. Place one cake layer on a plate, soak with half the milk mixture, and spread cream on top.
  12. Add second layer, soak again, and spread remaining cream over the top.
  13. Dust cocoa powder evenly on top.
  14. Refrigerate for at least 2–3 hours before serving.

  • Substitute mascarpone with cream cheese for a tangier flavor.
  • Use yogurt instead of eggs for an eggless version.
  • Increase coffee for a stronger flavor.
