Ingredients
- 1 cup vegan butter, softened
- 1/2 cup brown sugar

- 1/4 cup boiling water
- 1 1/2 cups all-purpose flour
- 2 cups rolled oats
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a large mixing bowl, combine vegan butter, brown sugar, white sugar, and vanilla extract until smooth and creamy.
- In a small bowl, dissolve the baking soda in boiling water.
- Add the baking soda mixture to the butter mixture and stir well.
- Add the flour and salt, mixing until fully combined.
- Fold in the rolled oats until a thick cookie dough forms.
- Scoop heaping tablespoons of dough onto the prepared baking tray, leaving space between each cookie.
- Bake for 10 to 12 minutes until the edges turn lightly golden.
- Allow the cookies to cool on the tray for 10 minutes.
- Transfer the cookies to a wire rack to cool completely before serving.
