Ingredients

  • 6 large eggs
  • 4 medium potatoes, peeled and thinly sliced
  • 1 large onion, thinly sliced
  • 1 cup olive oil or vegetable oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons milk
  • 1 teaspoon baking powder
  • 2 tablespoons chopped parsley (optional)

Instructions

  1. Peel the potatoes and slice them into thin rounds or small cubes. Slice the onion into thin strips.
  2. Heat the oil in a large frying pan over medium heat. Add the potatoes and onions and cook slowly for 15 to 20 minutes, stirring occasionally until tender but not crispy.
  3. Remove the potatoes and onions using a slotted spoon and place them on paper towels to remove excess oil.
  4. In a large bowl, beat the eggs until frothy. Add milk, baking powder, salt, and black pepper, then whisk thoroughly to incorporate air.
  5. Gently fold the cooked potatoes and onions into the egg mixture without breaking the potatoes too much.
  6. Heat a nonstick skillet over medium heat with a small amount of oil.
  7. Pour the egg mixture into the skillet and spread evenly.
  8. Cook for 5 to 7 minutes until the bottom is golden brown and the edges begin to set.
  9. Place a large plate over the skillet and carefully flip the omelette onto the plate.
  10. Slide the omelette back into the skillet and cook the other side for another 4 to 5 minutes.
  11. Once both sides are golden and the center is cooked to your liking, remove from heat.
  12. Let the omelette rest for a few minutes before slicing and serving.
