Description
Refreshing low-calorie gelatin cubes made with unflavored gelatin, water, lemon juice or apple cider vinegar, and a light sweetener for a simple chilled snack.
Ingredients
- 1 cup water, divided into 1/2 cup hot water and 1/2 cup cold water
- 1 tablespoon unflavored gelatin or 1 standard packet
- 1–2 teaspoons apple cider vinegar or fresh lemon juice (optional)
- 1 teaspoon honey, stevia, or sweetener of choice
Instructions
- Heat 1/2 cup water until steaming but not boiling.
- Slowly sprinkle gelatin over the hot water while stirring continuously.
- Continue stirring until the gelatin dissolves completely.
- Add apple cider vinegar or lemon juice if using.
- Stir in honey or sweetener of choice.
- Pour in the remaining 1/2 cup cold water and mix until smooth.
- Transfer mixture into a small glass dish or silicone mold.
- Refrigerate for at least 2 hours until fully firm.
- Cut into 12–16 cubes.
- Store refrigerated in an airtight container.
Notes
- Silicone molds make removal easier.
- Do not boil the gelatin mixture or it may affect texture.
- Fresh lemon juice gives a brighter flavor than vinegar.
- Stevia or monk fruit sweetener work well for a lower-sugar option.
- Do not freeze because the texture may become watery.
- Serve chilled for the best texture and flavor.
