Description

Soft, airy homemade pita pockets made with simple pantry ingredients and cooked until perfectly puffed, ideal for stuffing, dipping, or serving with meals.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp instant yeast
  • 1 tsp sugar
  • 1/2 tsp salt
  • 3/4 cup warm water
  • 1 tbsp oil

Instructions

  1. In a mixing bowl, combine warm water, sugar, and instant yeast. Let sit for about 5 minutes until slightly frothy.
  2. In a large bowl, mix the flour and salt.
  3. Gradually add the yeast mixture and oil to the flour mixture, stirring until a soft dough forms.
  4. Transfer the dough to a lightly floured surface and knead for 8 to 10 minutes until smooth, elastic, and slightly tacky.
  5. Place the dough in a lightly oiled bowl, cover with a clean cloth, and let rest in a warm place for about 1 hour, or until doubled in size.
  6. Gently punch down the dough and divide it into 6 to 8 equal pieces.
  7. Roll each piece into a ball, then flatten into a round disc about 1/4 inch thick.
  8. Preheat the oven to 220°C / 425°F or heat a skillet over medium-high heat.
  9. For baking, place the discs on a lined baking tray and bake for 5 to 7 minutes until puffed. For skillet cooking, cook each disc for about 2 minutes per side until puffed and lightly browned.
  10. Remove from heat and cover with a clean towel to keep the pita pockets soft.

  • High heat is essential for creating steam and helping the pita puff into pockets.
  • Roll the dough evenly to about 1/4 inch thick for the best puff.
  • You can use half whole wheat flour for a nuttier flavor and added fiber.
  • Add 1 tablespoon yogurt for a softer texture, if desired.
  • Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
  • Freeze pita pockets with parchment paper between each piece for up to 2 months.
